摘要: ABSTRACT Bacuri ( Platonia insignis , Mart.) is one of the most important among Amazonian fruits. However, little known about itspostharvest physiology, such as maturity stages, changes during ambient storage, and respiratory pattern. Fruits wereharvested at three stages based on epicarp colour: dark green, light turning (50% yellow), in order todetermine colour modification pattern storage (25.2 0 C, 75.1 % RH). Fruit all maturitystages showed, after days harvest, a non-climacteric pattern, with fruit presenting highestCO 2 production rate until fourth day (177.63 mg.CO .kg -1 .h ). Yellowing increased throughout asrelated to lightness, chromaticity, hue angle reductions. Turning can be stored conditions for up 10days without any loss marketability.
