摘要: Wheat-starch granules were isolated in a highly purified state from Cappelle and Manitoban hard red spring wheats. After exhaustive extraction with methanol or dioxan they still gave measurable yields of hydrolysate lipid. The lipid present was readily released when the granular structure disrupted, by gelatinisation boiling water 80% (at 30°) erosion pure dimethyl sulphoxide. consisted chiefly lysolecithin, some lysophosphatidylethanolamine traces other lipids. It confirmed that lysolecithin is native constituent starch granule. Some can be extracted without disrupting remainder, according to results sulphoxide, distributed at all depths within structure. Up one-quarter amylose wheat-starch granule appears bound helical complexes. Starch not pre-extracted contained ˜ 0·8% representing 83% total No biological material known which proportion so high.
