摘要: Rheological properties of the gellan/water system were investigated. Frequency dispersion curves dynamic storage and loss moduli (G′ G″, respectively) for gellan/ water at 5 wt% showed solidlike behavior low temperatures. The values G′ G″ appeared to decrease with increasing time after gelation. temperature curve on heating a shoulder in transition region, while no was observed cooling curve. This indicated that effect aging rheological gels becomes larger At 2 wt%, where remains liquid, little observed. activation energy flow estimated be 30 kJ/mol randomcoil conformation from dependence zero-shear viscosity. Two types concentration have been system: one corresponds gellan random-coil form high temperatures, other is helical intermediate temperatures show behavior.
