摘要: Durum wheat grain from the field is naturally contaminated with bacteria, yeast, and mold. The reduction in aerobic plate count (APC) yeast mold (YMC) often necessary before processing wheat. Gaseous ozone, ozonated water, acetic acid solution are nontraditional antimicrobial agents for grains safe humans environment. Better disinfection may be possible by applying to a fluidized state. Fluidization increases exposure of surfaces, resulting uniform quick contact agents. Therefore, bed was developed automated spraying system (to spray treatment waters), port gaseous ozone injection. pressures velocities within were measured characterize system. treatments used on were: distilled water (control), (6 ppm), (23 mg/L), + ppm, 23 (0.5%), (0.5%, 26 0.5%, mg/L). last these most effective 1.7 3.3 log APC YMC, respectively. This combined can replace chlorinated that industry uses during tempering grain. Ozonated alone resulted 0.3 both YMC. did not cause significant
