摘要: Emerging evidence from laboratory researches has highlighted the bioactivity of food melanoidins and melanoproteins. Whilst such studies have been carried out with different in vitro systems, information about absorption bio-availability are scarce. However, they generally considered as poorly absorbable bio-available compounds. Therefore, we present a review which gastro-intestinal tract is hypothesized to be main site action melanoproteins biological activity. We described recent data supporting this hypothesis both model systems vivo. Importantly, focused only on effect extracted food. Most had using water-soluble carbohydrate-based isolated sources (beer, barley coffee, coffee). In bakery products, protein-based structure (melanoproteins) largely insoluble water. Dietary demonstrated exert antioxidant metal chelating ability reducing formation lipid hydroperoxides advanced oxidation end products during digestion meat. The reduction these pro-atherogenic compounds shown followed by decrease their human volunteers. Food also anti-caries prebiotic activities. conclude underlining possible role prevention cancers. hope will stimulate further research activities tract.
