摘要: As globalization of food marketing and distribution in our present interconnected society increases, the potential for contaminated increases as well, highlighting need tools to identify types sources pathogen contamination. The concept tracing pathogens their origin using microbiological, genotypic, phenotypic methods has been termed microbial source tracking (MST). application MST identifying host linked foodborne outbreaks human illness can lead targeted research, improved investigative inspection practices, other system interventions. This chapter reviews safety concerns various industries examines applicability molecular studies.
