摘要: Since food spoilage by yeasts causes high economic losses, fast and accurate identifications of associated with food-related products are important for the industry. In this study efficiency matrix assisted laser desorption ionization time-of-flight mass spectrometry (MALDI-TOF MS) to identify related was evaluated. A CBS in-house MALDI-TOF MS database created later challenged a blinded test set 146 yeast strains obtained from products. Ninety eight percent were correctly identified log score values>1.7. One strain, Mrakia frigida, gained correct identification value 1.7. Ambiguous observed due two incorrect reference spectra's found in commercial BDAL v.4.0, namely Candida sake DSM 70763 which re-identified as oleophila, inconspicua 70631 Pichia membranifaciens. can distinguish between most species, but some species complexes, such Kazachstania telluris frigida showed limited resolution sibling sometimes problematic. Despite this, we that is applicable routine validation foodborne yeasts, further update databases needed.
