POLYPHENOL OXIDASE INHIBITORY AND ANTIOXIDANT ACTIVITY OF EXTRACT OF CANNA EDULIS KER STEM

摘要: Polyphenol oxidase (PPO) extracted from Canna edulis Ker rhizome was investigated. The substrate specificity established as catechol > caffeic acid > chlorogenic acid > gallic acid > catechin. optimum temperature and pH of the PPO activity were 20C 6.8, respectively. sensitive to many general inhibitors including C. stem extract. Through response surface design, optimized inhibitor combination, containing 200 mg/L citric acid, 284 mg/L ascorbic 67 mg/L ethylenediaminetetraacetic acid 8,000 mg/L extract, obtained. With 96.73% inhibition rate, combination could be developed a natural additive used in process food preservation sight safety aboveground part confirmed by animal experiment.
