摘要: Abstract Spanish consumers' knowledge and attitudes towards microalgae as food were assessed using a specific questionnaire - total of 3084 consumers over 18 years old considered in the current study. Overall, revealed that there is huge lack on basic aspects microalgae, especially within youngest respondents (18–24 years old) for those aged 65 years old. Approximately 85% all scored statement “There big information about microalgae” with either 4 or 5 (using 5-point hedonic scale), demonstrating their potential applications are unknown to majority population. consider as: (i) sustainable environmentally friendly, (ii) nutritious healthy, (iii) safe, which key importance products. The main reasons given not consuming available product habit. study also demonstrated increasing consumer's has increase consumer choice market shares microalgae-enriched Results reported herein could be extrapolated other European countries, although perception can vary depending cultural considerations.
