摘要: Summary Nanotechnology is an emerging field of research that has been widely applied in different scientific and engineering areas. The agro-food sector not exception, which considers its applicability several areas major interest for both consumers producers. This review concepts related to nanostructures nano-based instruments used the food sector, as well their applications products. Food safety through use nanosensors pathogen detection, smart packaging, valorisation products by nanoencapsulation/nanodelivery ingredients (e.g. flavours) are examples important nanotechnology. Consumers' apprehension regarding stability issues also considered.
