摘要: Cyclodextrin complexes were prepared using 1∶1 and 1∶0.5 molar ratios of cyclodextrins high-carotenoid canola oil. β-Cyclodextrin formed powdered with a ratio 1∶0.5, cyclodextrin/high-carotenoid With ratio, the complex was clumpy. In case α-cyclodextrin, powdery either or ratio. The triglyceride oil present in varied between 28.87 48.2%, there, no segregation during formation. stability carotenoids tocopherols also same brown bottles whether kept under nitrogen oxygen. clear glass vials, amounts α-and β-carotene went down, but there very little change tocopherols. respect to sterols, more than 90% sterols degummed α-cyclodextrin complexes, thereby indicating higher affinity cyclodextrin cavity.
