摘要: To encourage children to frequently consume wild blueberries as part of their dietary patterns, incorporating blueberry powder into specific foods may be an effective strategy. Thus, it is important determine appropriate types food products that both minimize processing-induced loss beneficial components (e.g., anthocyanins) and satisfy at the same time nutritional sensory aspects. For clinical studies assessing health benefits blueberry-containing samples, would ensure entire portion test samples. This study, therefore, aimed determining how acceptability (liking) psychological reward (wanting) blueberry-based vary over multiple steps ad libitum consumption: appearance, first bite/sip, half full consumption. Five different containing targeted amount were prepared for testing (oatmeal bar, beverage, ice pop, gummy, cookie), residual amounts total anthocyanin chlorogenic acid measured confirm levels deliver bioactive these phytochemicals. Results showed while overall liking desire eat did not differ among five samples appearance bite/sip steps, they differed significantly end Although liked wanted cookies more when compared beverages, pops, and/or gummies, contents lower in gummies than powder, pop Notably, oatmeal bars with significant from respect liking, eat, consumed. In conclusion, this study shows evaluation using bites/sips consumption, along a measurement compounds, efficient vehicles foods.
