Sensory properties and analysis of two muddy odour compounds, geosmin and 2-methylisoborneol, in water and fish

摘要: Abstract Muddy or earthy odours are a problem in water supplies and fisheries. Some species of aquatic actinomycetes blue-green algae generally indicated as sources muddy odour natural waters. These organisms capable producing the muddy-smelling compounds geosmin 2-methylisoborneol. The sensory properties 2-methylisoborneol flesh four fish were studied. Threshold concentrations presented, they indicate that both have strong characteristics. intensity perceived by judges was proportional to logarithm concentration ranges tested (for geosmin, up 100 μgkg −1 , for 2-methylisoborneol, 10 μg kg ). results it may be possible quantify methods.
