Viscoelastic characterization of solid-like structure in aqueous colloids of globular proteins

摘要: Abstract The relationship between viscoelastic properties and the colloidal structure of aqueous colloids globular proteins, such as ovalbumin (OA), bovine serum albumin (BSA), rat (RSA), has been studied. OA systems show a remarkable yield stress σy dynamic modulus G′, due to solid-like structure, even in very dilute 0.03 wt.%. rigidity increase sharply with gelation heat denaturation molecule. They increasing ionic concentration then decrease, passing through maximum. also have certain values which are approximately equal 0.1 Pa for BSA 0.08 RSA system, remain almost constant over wide range from about 0.01–10 Although this rheological behavior is characteristic, it seems be common property various proteins. can strongly related electrostatic interaction dispersing particles size particles.
