On solid-like rheological behaviors of globular protein solutions

摘要: Dynamic viscoelastic and steady flow properties of β-lactoglobulin, bovine serum albumin, ovalbumin, α-lactalbumin aqueous solutions were investigated at 20°C. When a sinusoidal strain in the linear region was applied, globular proteins except for showed typical solid-like rheological behavior: storage modulus G' always larger than loss G entire frequency range examined (0.1-100 rad/s). Under shear flow, strong thinning behavior observed with increasing rate from 0.001 to 800 s -1 , α-lactalbumin. The values viscosity η lower those dynamic * comparable time scale observation, violating Cox-Merz rule, thus suggesting that structure protein solution susceptible strain. During isothermal gelation colloids 70°C, no crossover between so point judged by an abrupt increase or sudden decrease tanδ. Les proprietes d'ecoulement dynamique viscoelastique et permanent de aqueuses β-lactaglobuline, serumalbumine bovine, ovalbumine α-lactalbumine sont etudiees Lorsqu'une deformation sinusoidale est appliquee dans la zone lineaire viscoelastique, les proteines globulaires l'exception l'α-lactalbumine presentent un comportement rhelogique typique d'un solide.
