摘要: The by-products of processed grape (grape seeds and peels) can be recovered for further food applications. Extracts were obtained with solvents different polarity (aqueous acetone, methanol ethanol) assayed their total phenolic content antioxidant activity. high amount phenols was found in seeds. Higher yields antioxidants acetone. recovery from the peels could a valuable alternative to traditional disposal routes (including landfill), particular cooking varieties. recycling process enhance growth culinary markets thanks new business opportunities peel-derived seed-derived materials.
