摘要: Araucaria angustifolia and araucana are conifers that cover different areas of South America. Their seeds have been consumed from prehistoric times until today in Brazil, Argentina Chile. In this work, the starch were analysed by light environmental scanning electron microscopy, X-ray diffraction, differential calorimetry. The granules A. round or slightly oval, with a central hilum. Both starches gave diffraction patterns compatible A-type, strong peaks at 15°, 17°, 23°. gelatinisation temperature (68.5°C) was higher than (66.6°C), probably due to amylose content former (22.4 % 17.3 %, respectively). thermograms presented minor peak about 71°C, which attributed fact population heterogeneous, large small granules, whereas contained mainly granules.
