摘要: Seaweeds and seaweed derived bioactive compounds have been used for centuries in myriad applications ranging from glass gunpowder production, to their use haute cuisine molecular gastronomy. This chapter discusses recent advances the development of proteins peptides food cosmeceutical use. It collates published data concerning macroalgal peptides, potential functional foods cosmeceuticals. The attributes sources are discussed along with identified health benefits. Issues including sustainability raw material resource novel processing technologies, which may enhance seaweeds proteins, also discussed.
