Effects of Oxygen and Carbon Dioxide Partial Pressures on Monascus Growth and Pigment Production in Solid-State Fermentations

摘要: Levels of oxygen and carbon dioxide in the gas environment were found to influence pigment production significantly growth a lesser extent solid-state fermentations with Monascus purpureus on rice. Maximum yields observed at 0.5 atm partial pressure closed vessels. However, high pressures progressively inhibited production, complete inhibition 1.0 atm. In aeration system packed-bed fermentor, ranging from 0.05 constant 0.02 gave maximum 0.50 oxygen, whereas lower 0.21 higher yields. uptake evolution rates 70–90 60–80 h, respectively, depending environment. Respiratory quotients close 1.0, except pressures. Optimum conditions for formation generally not same as those growth.
