摘要: Polyphenols are secondary metabolites of plants and include a variety chemical structures, from simple molecules such as phenolic acids to condensed tannins highly polymerized compounds. Caffeic acid (3,4-dihydroxycinnamic acid) is one the hydroxycinnamate more widely distributed in plant tissues. It present many food sources, including coffee drinks, blueberries, apples, cider, also several medications popular use, mainly those based on propolis. Its derivatives known possess anti-inflammatory, antioxidant, antitumor, antibacterial activities, can contribute prevention atherosclerosis other cardiovascular diseases. This review an overview available information about synthesis antioxidant activity caffeic derivatives. Considering relevance these compounds human health, them have been focus reviews, taking center their obtaining plants. There few revisions that compile methods, this way, we consider does important contribution.
