摘要: Abstract ComBase is a large database of microbial responses to food environments and has attracted the attention many researchers processors. Although contains vast amount data, it not easy obtain desired information from retrieved data. In present study, we developed new ComBase-derived (Microbial Responses Viewer, MRV) consisting growth/no growth The response was defined as representing “growth” if significant increase in bacterial concentration (> 1.0 log10) observed. Alternatively, positive value specific rate. data nineteen different microorganisms were extracted all comprising 29 kinds microorganism. Furthermore, rate each microorganism modelled function temperature, pH, water activity (aw) using Poisson log-linear model, which family generalized linear models (GLMs). For 16 19 microorganisms, growth/death successfully aw GLM. illustrated two-dimensional contour plot with MRV provides concerning boundary conditions rates queried microorganisms. Using MRV, processors can easily find appropriate design processing conditions. This will contribute efficient safe production distribution processed foods.
