摘要: After establishing the presence of pathogens or toxins in foods food products, next important concern is whether organisms/toxins are biologically active. For this purpose, experimental animals employed where feasible. When it not feasible to use whole animal systems, a variety tissue culture systems have been developed that, by responses, provide information on biological activity their toxic products. These bioassay and related tests methods choice for some foodborne pathogens, principal ones described Table 12–1.
