摘要: Abstract Listeria monocytogenes is a human pathogen that can cause serious foodborne disease. For this reason, of great interest to all food manufacturing companies. Recent outbreaks listeriosis in which poultry products were implicated have focused the attention industry on L. monocytogenes. Historically, has been isolated from processing plants, especially during latter stages (post evisceration). This study was designed survey several plants and determine incidence carcasses. Three commercial chicken examined for presence carcasses early (pre-scald) late (post-chill) process. Overall, percentage positive post-chill samples lower than previously reported earlier studies. Carcasses two maintained low at both sample sites. third plant accumulated significant increase pre-scald post-chill. later replaced evisceration equipment. A second evaluation, one month after placement equipment, revealed much processed
