摘要: Abstract Street food refers to and beverages prepared sold by vendors in streets other public places for immediate consumption. In Ghana street foods are at small eating popularly known as ‘chop bars’. Food safety studies were conducted on the premises of 160 bars’ Ga District July 1998. Only three (1.8%) proprietors met all requirements (based a five-point checklist) basic hygiene. Twenty-four (15%) out had access potable water while 136 (85%) purchased from six used pond water. These two latter sources poor microbiological quality (as shown faecal coliform values which ranged 1.0×10 2 –1.9×10 5 cfu/ml). One hundred five (65.6%) did not obtain their meat supply an approved source. Factors influencing purchase source included proximity chop bar slaughter facility, conduct inspection personnel affordable user fees.
