摘要: The muscle, liver, kidney and fat samples of 20 roe deer both sexes originating from a hunting area in central Hungary were investigated for the presence heavy metals such as As, Cd, Hg Pb, their contents evaluated possible health risk to consumers. Both As found at level below limit detection (< 0.5 mg/kg wet weight) all samples. median measured Cd concentrations was significantly higher liver (p = 0.0011) bucks than does. In bucks, levels exceeded respective maximum limits laid down European legislation four three muscle samples, whereas does, detected amounts Pb one buck eight two six nine tissues concentration (p = 0.02) greater does compared roebucks. Based on data obtained present study, consumption organs could be objectionable food-toxicological point view may pose high consumers wild game due cadmium lead contents.
