摘要: Autoinducer-2 (AI-2) is a compound that plays key role in bacterial cell-to-cell communication (quorum sensing). Previous research has shown certain food matrices inhibit this signaling compound. Using the reporter strain, Vibrio harveyi BB170, quorum-sensing inhibitors contained poultry meat wash (PMW) samples were characterized by molecular weight and hydrophobic properties using liquid chromatography systems. Most fractions demonstrated AI-2 inhibition 13.7 kDa or less, had properties. Hexane was used to extract inhibitory compounds from PMW preparation further separated gas (GC). Several fatty acids identified quantified. Linoleic acid, oleic palmitic stearic acid each tested for at 0.1, 1, 10 mM concentrations. All expressed (ranging approximately 25% 99%). Fatty acids, combined concentrations equivalent those determined GC analysis, 59.5%, but higher (10- 100-fold) 84.4% 69.5%, respectively. The (100-fold) did not demonstrate substantial decrease colony plate counts, despite presenting high inhibition. These through modulating quorum sensing inhibition, may offer unique means control foodborne pathogens reduce microbial spoilage.
