摘要: Beef is an excellent source of high biological value protein, a significant long-chain n -3 fatty acids, vitamins (A, B 6 , 12 D, E) and highly bioavailable forms essential minerals trace elements such as zinc, copper iron. The relative proportion nutrients the acid composition adipose muscle tissues can be affected by factors diet, species, fatness, age/weight, depot site, gender, breed, season hormones. This chapter describes various nutritional approaches to enhance mainly beneficial acids in beef.
