摘要: Celiac disease (gluten-sensitive enteropathy, celiac sprue, nontropical sprue) is characterized by damage to the small intestinal mucosa and malabsorption of most nutrients (reviewed in Cole Kagnoff 1985; 1989). The activated dietary exposure wheat gluten similar proteins several other grains. Wheat a mixture gliadin glutenin (Kasarda 1981).
