摘要: Abstract This study analyzed fish paste containing Lagocephalus lunaris powder (LLP). The moisture, crude ash, protein,and lipid content of LLP were 6.21%, 1.03%, 74.50%, and 1.21% respectively. tested concentrations LLPwere 0, 3, 5, 7%. pH the samples ranged from 6.75 to 6.89, moisture 75.23% to76.95%. L values decreased as decreased, a b increased.In addition, folding test results in all “AA”, indicating good mean flexibility. In texture meter test,the hardness, strength, springiness, gumminess, chewiness increased according increasing LLP. Inthe sensory evaluation, prepared with 5% preferred over other pastes. These suggest thatLLP can be applied for substantially its quality functionality.Key Words: powder, paste, characteristics
