摘要: Within the subtropical outermost regions of Europe, meat is obtained from two sources: importation and local production. Transportation time critical factor that affects imported (IM) carcass quality, whereas (LM) frequently regional breeds. The aim this study, therefore, was to evaluate carcasses quality in order promote consumption breeds, using Canary Islands (Spain) as a model for other regions. For study 20 half-carcasses Palmera breed were used at different weights (5 10 kg). Five-kilogram lamb had less moisture more protein than did comparable IM carcasses.
