A Survey on Elementary School Children's Perception and Preference of Kimchi

摘要: Abstract The purpose of this study was to evaluate the perception and preference Kimchi among elementary school children. survey conducted via questionnaire 439 children(224 males 215 females) who lived in Seongnam. 77.2% surveyed children had an affirmative opinion intake. Children regarded as traditional, nutritious, healthy, fermented delicious food. It also revealed that higher grade(4 ~ 6 grade) students were more awareness Korean traditional healthy food for than lower grade(1 3 students. They should eat mainly because is good health(82.9%), nutritious food(62.9%), our food(58.3%), food(41.5%). 73.9% responded parents influenced on their consumption Kimchi, but 16.5% answered did not meddle. 67.3% liked whereas 5.3% them disliked it. significantly grade main reason liking hot taste(60.8%) then texture chewing(59.0%), taste freshness (29.2%), cool taste(28.7%), peculiar taste(26.9%) order. majority reasons dislike salty taste, oftenly, smell, appearance number one diskike especially female students, it most important those like Kimchi. preferred a little properly medium amount seasoning any parts Baechu Kimchi.Key words: perception, preference,
