摘要: Abstract Food authenticity is a major concern of humans due to the increasing public awareness for label information about components, production process, and origins foods. Some spectroscopic nondestructive techniques such as nuclear magnetic resonance (NMR) Fourier transform infrared (FT-IR) spectroscopy have been applied in rapid determination food authenticity. These methods together with chemometrics highly improved detection efficiency by shortening analytical time providing superior results. Using more powerful spectral imaging including Raman chemical hyperspectral imaging, data can be utilized visualize biochemical composition sensory property image at pixel level. Other based on isotopic analysis, chromatography, DNA enzymatic analysis their recent applications authenticating products also emphasized. The challenges research trends development this field indicated.
