摘要: Chili hotness is very much dependent on the concentration of capsaicin present in chili fruit. A new biosensor based a horseradish peroxidase enzyme-capsaicin reaction mediated by ferrocene has been successfully developed for amperometric determination hotness. The fabricated single-step immobilization both and photocurable hydrogel membrane, poly(2-hydroxyethyl methacrylate). With mediation ferrocene, could measure concentrations at potential 0.22 V (vs. Ag/AgCl), which prevented interference from other electroactive species sample. Thus good selectivity towards was demonstrated. linear response range 2.5-99.0 µM with detection limit 1.94 µM. relative standard deviation (RSD) reproducibility 6.4%-9.9% obtained. demonstrated long-term stability up to seven months. performance validated using method analysis HPLC.
