A survey was made of the distribution protease activities in digestive tract anchovy and its role protein digestion. 2. major proteolytic activity alkaline range, with a maximum at pH 9.5, minor acid 3.0, detected. 3. High levels trypsin, chymotrypsin, elastase aminopeptidase were present pyloric caeca intestine anchovies. The carboxypeptidase B very low. 4. Serine proteases, mainly trypsin seemed to play decisive 5. Myofibrillar proteins efficiently degraded by contribution other proteases degradation myofibrillar strongly depended on presence trypsin.
