Antioxidant activity and mechanism of action of thymol and carvacrol in two lipid systems

摘要: The autoxidation of purified triacylglycerols lard and sunflower oil (TGL TGSO) containing 0.02, 0.05, 0.10 0.20% thymol carvacrol was studied at ambient temperature. results obtained with the inhibited lipid systems (thymol - TGL; TGSO showed that had highest antioxidant effectiveness activity during oxidation. Thymol participated in one side reaction TGL oxidation, took part two reactions Carvacrol molecules did not participate contributed to chain initiation a higher degree oxidation than radicals propagation both systems. In general, lipids temperature, is more effective active carvacrol. Both antioxidants differ mechanism their inhibiting action which depends on character medium. better TGL, whereas does significantly.
