摘要: Aqueous solutions of gellan gum with comparable molecular masses but different acyl contents were investigated by atomic force microscopy and rheological measurements in the presence or absence various cations. For a high-acyl sample, no continuous network structures identified microscopically, except Ca2+, where structural inhomogeneity was highest terms height distribution assemblies. Rheological thermal hysteresis between sol−gel transitions detected K+ particularly Ca2+. The storage modulus at 20 °C larger order Na+ < Ca2+ K+. low-acyl each cation, involving greater than corresponding data for sample.
