摘要: The effects of high hydrostatic pressure treatment and the ability for survival, repair, growth three human pathogenic serotypes (O:1, O:3, O:8) Yersinia enterocolitica were investigated in washed-curd model cheese made with pasteurized bovine milk. Samples treated at 300, 400, 500 MPa 10 min 20°C analyzed 0, 1, 7, 15 days to assess viability population. A long-term study (up 60 ripening after treatment) was also undertaken.
