摘要: Abstract Germinating barley proteolytic enzymes hydrolyze insoluble seed storage proteins into soluble proteins, peptides and amino acids. This process is of vital importance to both germination the commercial malting process. study reports development a two-dimensional IEF × PAGE separation method utilizing protein substrates incorporated gel analyze partially characterize endoproteinases germinating grain. The separated 42 different activities, which fell five groups on basis their pI values, mobilities biochemical characteristics. Multiple representatives each four proteinase classes were present, but about 64% cysteine proteinases. majority had pH optima considerably below neutrality, those serine proteinases generally eight or higher. Most hydrolyzed gelatin faster than edestin, aspartic class one an undetermined only edestin. These results show that protein-hydrolyzing system green malt (4-day-old germinated barley) very complex.
