摘要: The measurement of plasma constituents in a blood sample can provide information on the stress status animal. interpretation results obtained for samples collected at exsanguination must consider effect slaughter process constituent. Both electrical and mechanical stunning methods cause dramatic increases catecholamine levels minor glucose levels. Thus, there are difficulties and, to lesser extent, glucose, values post-stunning. Cortisol appear be unaffected by this constituent post-slaughter has been used assist evaluation transport abattoir treatments. Beta-hydroxybutyrate concentrations may evaluating nutritional prior while limited evidence available suggests that beta-endorphin measurements will value assessing pain other stressors slaughter. Adreno-corticotrophic hormone, calcium magnesium, free fatty acids, lactate thyroid hormones have all occasions status. In some cases it was not possible demonstrate clear relationship between indicate stress, stress-related meat quality defects.
