摘要: Several reports claim that vegetable proteins cause a lowering of plasma cholesterol when substituted for animal proteins. The present study was carried out to determine whether soy alter lipoproteins or balance compared casein protein in humans investigated on metabolic ward. Fourteen men were studied two periods, each 1 month's duration. In period I the diet contained 30% calories as fat (in form lard), 55% carbohydrate and 15% protein. Period II identical except used instead casein. Ten patients had normal levels triglycerides with varying concentrations cholesterol. substitution produced no consistent change cholesterol, triglycerides, low-density lipoprotein, high-density lipoprotein. Estimated synthetic rates bile acids also unchanged. contrast, caused significant three four hypertriglyceridemia. Thus, only alteration induced by this reduction elevated; discernable effects metabolism
