摘要: Proximate composition, cholesterol, and fatty acid content of brown shrimp (Crangon crangon L. 1758) harvested from the Sinop region Black Sea in Turkey was determined. Crude protein, lipid, moisture, ash contents were 18.47 ± 0.09 g/100 g, 0.95 0.05 79.21 0.01 1.39 respectively. Cholesterol 173.56 0.24 mg/100 g. Fatty composition 33.04% saturated (SFAs), 22.17% monounsaturated (MUFAs), 29% polyunsaturated (PUFAs). Among SFAs, palmitic (C16:0) predominant at 20.69% total composition.
