摘要: To investigate the mode of action leucocin K7 against Listeria monocytogenes and to assess its inhibitory effect on Lis. in refrigerated milk. A bacteriocin-producing strain, Leuconostoc mesenteroides K7, was isolated from a fermented pickle. The bacteriocin, exhibited antagonistic activity with an MIC 28 µg/ml. It sensitive proteaseS displayed good thermal stability broad active pH range. Leucocin had no efflux ATP but triggered K+ intracellular hydrolysis ATP. also dissipated transmembrane electrical potential completely gradient partially. 80 AU/ml inhibited growth by 2.3–3.9 log units milk; when combined glycine (5 mg/ml), it eliminated viable over 7 days shows different nisin may have application milk preservation.
