摘要: A duplex polymerase chain reaction (PCR) was developed to identify the milk of bovine and buffalo species in cheese products, particularly mozzarella cheese, a typical Italian made from buffalo's milk. Two sets primers were designed on basis alignment sequence codifying mitochondrial cyt h available GenBank database. The proved be species-specific, giving rise 279-bp (bovine) 192-bp (buffalo) amplified fragments. Since amplification conditions for identical, PCR successfully applied two single step. This technique, when used test products retail trade, allowed detection partial or even total substitution cow's milk, some cases samples misleadingly labeled pure mozzarella. Le sujet de cette etude est developper une methode en chaine par duplex, capable d'identifier et differencier l'ADN bovin buffle dans unique. Cette utilisee pour detecter la presence lait vache des fromages etiquetes pur buffle. L'evaluation origines laits utilises tres importante Italie ou mozarella au protegee appellation d'origine.
