Effect of browning reaction products of phospholipids on autoxidation of methyl linoleate

摘要: Methyl linoleate was allowed to autoxidize in bulk phase at 50 C the presence of either synthetic phospholipids consisting saturated fatty acids or egg yolk estimate effect base group and acid moiety on oil autoxidation. Dipalmitoyl phosphatidylcholine (DPPC) dipalmitoyl phosphatidylethanolamine (DPPE) exhibited poor antioxidant activity showed no synergistic with α-tocopherol. The addition (PC) (PE) accelerated oxidation methyl linoleate. However, PC PE collected various stages heating 180 inhibited hydroperoxide formation initial stage oxidation. This could be attributed browning products formed during reaction. Thus, color from unsaturated high temperatures may influence stability, although did not exert any significant effect.
