Studies of lactic acid bacteria associated with brewery products. I.—identification of types isolated from beer and from yeast

摘要: A survey has been made of a selection the lactic acid bacteria occurring in 12 samples yeast and 9 beer from British breweries. Strains 8 known species were identified these included Lactobacillus buchneri, Lb. bifidus, leichmanii, plantarum Streptococcus cremoris, none which hitherto detected beer. In addition, three rod-shaped organisms isolated proved to be type cultures new Lactobacillus. Five cocci found related Pediococcus damnosus var. salicinaceus Mees have classified as strains this species. These had very small cells, those Ped. itself being relatively much greater diameter.
