摘要: Publisher Summary This chapter discusses three case studies, namely, the causal agent and symptoms, occurrence of fungi, mycotoxins. Data on crop distribution all over world meteorological conditions in growing areas are collected elaborated with a geostatistical approach to predict level risk for each mycotoxin considered crop. Mycotoxins occur raw agricultural products pre- post-harvest. Cereals among most studied crops toxin contamination, but fruits their processed also represent potential source risk, species belonging Aspergillus Penicillium worldwide recognized as main concern. is ubiquitous fungal genera, mostly including saprophytic that colonise plant debris or deteriorated commodities, few strains able living plants.
