摘要: Ingestion of food is considered a major route exposure to many contaminants including mycotoxins. The amount mycotoxin resisting the digestion process and potentially absorbable by systemic circulation only smaller part that ingested. In vitro models turn useful for evaluating mycotoxins bioaccessibility during intestinal transit can be intended as valuable tool assessment bioavailability in food. this paper we describe study aimed at investigating toxicity gastro-duodenal digests contaminated bread collected along time-course. Toxicity tests were carried out on sensitive RPMI lymphoid B cell line chosen most suitable lineage assess retained digests. parallel, chemical quantification T-2 HT-2 toxins contaminating was accomplished gastric duodenal transit. digestive fluids undergoing toxicological analysis beginning end phase, after completion phase. Results proved correlation between content did exist although more persistent toxic activity displayed later stage This might explained co-occurrence unknown HT-2-related conjugates or metabolites formed digestion.
