摘要: Summary The predrying heat history of nonfat dry milk solids was shown to have a marked influence on the subsequent activity starters propagated in that after reconstitution. In general, commercial high-heat powders supported starter more favorably than did low-heat powders, and this effect could be illustrated both by acid production speed dye reduction. However, NDMS samples with an excessively severe exerted deleterious activity. It possible establish response cultures milk-powder not isolated occurrence, but rather general phenomenon for wide variety starters.
