摘要: An overview is provided of the status research at frontiers investigation chemistry and photochemistry two classes natural plant pigments, anthocyanins betalains, as well pyranoanthocyanin pigments formed from during maturation red wine. Together, betalains are responsible for almost all red, purple blue colors fruits flowers pyranoanthocyanins major contributors to color wines. All three types cationic below about pH 3, highly colored, non-toxic, reasonably soluble in water or alcohol fairly stable light. They exhibit good antioxidant antiradical activity and, part our diet, confer a number important health benefits. Systematic studies model compounds containing basic chromophoric groups these providing deeper understanding often complex their relationship roles vivo plants. These currently being exploited starting materials preparation novel semi-synthetic dyes, fluorescence probes.
