摘要: Alcoholic fermentation is an important process in the modern world allowing production of ethanol for diverse applications. Different Saccharomyces cerevisae strains have been used this purpose, such as CAT-1, a strain resistant to different stress factors. Then, our aim was analyze some fermentative parameters and proteome S. CAT-1 under Very High Gravity Fermentation (VHGF) using sugarcane juice medium. The yeast cultured must with sucrose concentration adjusted 2%, 14%, 21% 30%, 10 h at 30ÂoC. cell viability 96-100% all concentrations analyzed biomass increased each condition time function. highest recovery obtained 30% sucrose. Considering cerevisiae 14% sucrose, qualitative quantitative differences were found protein expression. Important enzymes fermentation, enolase one alcohol dehydrogenase isoform more expressed than interesting be VHGF technology juice, high expression proteins related alcoholic well.
